2 Cups Honey
4-5 Cup Pitted Dates
2-3 Tsp Coconut Oil
3 Cups Pitted Dates
3/4 Cup Peanut Butter
Pinch Himalayan salt
1-2 Tspp Coconut oil
1/4 Cup raw Cacao Powder
1/4 Cup Rice Malt Syrup
2 Tbsp Raw Honey
1/3 Cup Coconut oil
1/2 Cup roughly chopped peanuts
Pop all of the base ingredients in a food processor and blend until granola is broken down and has a sticky texture. Pat down into the mould or (lined) cake tin and make sure the surface is pressed down firmly and evenly so that it covers all areas evenly. Place in the freezer while you are preparing the caramel.
Place all the caramel filling ingredients into the food processor and blend until you have a smooth caramel texture (resist the urge not to eat it all now- this is easier said then done!). Spread on top of base evenly and place back in the freezer.
In a mixing bowl combine the raw cacao powder, rice malt syrup, natvia and coconut oil until smooth. Spread over caramel layer and sprinkle with the chopped peanuts.
It is best to pop this back in the freezer to set for at least another hour or so to set. Enjoy!
