Sweet Golden Ale Cupcakes

How does a Newstead Brewing Co Golden Ale cupcake with sweet osmanthus-infused honey buttercream sound? In honour of Brewsvegasthe girls at MySweetopia are baking a selection of beer-flavoured cupcakes from 21–28 March. Because they’re only around for a short time (and we know you’ll want more), we’ve got one of the decadent recipes for you to recreate at home.


For the cupcakes:
2 egg whites
1/2 cup sugar
1/2 tsp baking powder
1/4 tsp baking soda
1/4 cup vegetable oil
3 tbs milk
1 cup all-purpose flour
1/2 cup golden ale or other wheat beer
2 tbs sweet osmanthus honey

For the buttercream:
250 g unsalted butter at room temperature
100 g sifted icing sugar
2 tbs sweet osmanthus honey
1/2 cup golden ale or other wheat beer


For the cupcakes:
Preheat oven to 175°C and prepare a cupcake baking tin with 12 cupcake liners.

In a medium-sized mixing bowl, whip egg whites until soft peaks form. Then gradually mix in the sugar.

To this, mix in baking powder, baking soda, vegetable oil, honey and milk. When combined, mix in half of the flour.

Finally, mix in the beer followed by the other half of the flour.

Spoon the mixture into cupcake liners until they are 3/4 full. Bake at 175°C for 15 minutes or until cupcakes bounce back when lightly touched.

For the buttercream:
Beat all ingredients on low speed for two minutes or until well combined. Then turn the mixer on high and beat until buttercream is light and slightly bouncy.

To make sure all the sugar has been dissolved in the buttercream, rub a little between your fingers. If it is smooth, then you’re ready to start piping your cupcakes.

When the cupcakes have completely cooled you can ice them. Decorate with a small drizzle of honey and enjoy!
