200g cherry tomatoes
300g pureed tomatoes
1 chilli, sliced
3 garlic cloves, sliced
3 shallots, sliced
200ml white wine
12 king prawns
Add anchovies to cold pan on medium heat. Let anchovies melt away.
Add garlic, chilli and shallots, increase to high heat and cook until soft. Add cherry tomatoes and deglaze with white wine. Let the wine reduce by half. Add pureed tomato and simmer for five minutes. Keep warm.
Grill king prawns and pour puttanesca sauce over the top to serve. Finish with fresh parsley.
