These golden, toasty biscuits were sent to our brave troops on the Western Front in World War I. Their ingredients – oats, coconut, golden syrup – didn’t require refrigeration and were transported by ship from Australia to Gallipoli. In remembrance of the ANZAC tradition, Lost Bean shares their recipe for ANZAC biscuits.
350g plain flour
200g rolled oats
450g caster sugar
125g desiccated coconut
6g bicarb soda
50g golden syrup
75g hot water
1. Preheat oven to 160°C.
2. Mix dry ingredients together
3. Melt butter
4. Mix the golden syrup and hot water with the melted butter, then stir this through the dry ingredients
5. Roll mixture into small balls and place on lined baking tray, pressing down on the tops to flatten slightly.
6. Bake for 15 minutes at 160°C.
