Steve Howes was born to be a chef. His experiences cooking for his parents in his home kitchen as a child shaped his passion to create beautiful food for a living, leading him to take up the position of Head Chef at Mister Paganini. His sustainable ethos and soulful approach to his work made him the perfect fit for the authentic Italian eatery.
WHERE DID YOUR PASSION FOR FOOD AND COOKING COME FROM?
I’ve been in the kitchen since I was a little boy – I used to cook steak diane for my mother who’s name is also Dianne! That was when I decided that I wanted to be a chef – and a good one at that.

When diners walk into Mister Paganini, I want them to feel at home. We’re all about generous portions and fresh sustainable ingredients.

Getting to use our woodfired pizza oven every day is my favourite thing about the restaurant. I love that about Italian food – it has so much soul and it’s all about the full experience of the culture.
DO YOU HAVE A FAVOURITE DISH ON THE MISTER PAGANINI MENU?
I can’t go past our super silky pumpkin ravioli with burnt butter and prosciutto di Parma.

One thing that really sets us apart is our team – the passion and enthusiasm of our staff really shines through. We put love into everything we cook and serve, and I feel like this is reflected in
what you see on the plate.
WHAT GOURMET TREND HAS INSPIRED YOU RECENTLY?
The zero-waste philosophy is something that inspires my style of cooking. It is challenging but rewarding finding ways to use every part of our produce and supporting local farmers whilst still creating beautiful dishes.
WHAT DO YOU LIKE MOST ABOUT SOUTH BANK?
South Bank is one of Brisbane’s most beautiful spots! There’s a sort of buzzing energy all around – it’s hard not to smile when you see people out and about enjoying the sunshine.
