Fine Flavours with Matt Wood from Stokehouse Q

With its striking architecturally designed building perched on the banks of the Brisbane River, there is something undeniably impressive about Stokehouse Q from the outside. But even more special is what lies inside – stunning dishes prepared with the region’s best produce using time-honoured techniques. Head chef Matt Wood agrees.

WHAT INSPIRED YOU TO BECOME A CHEF?
I never had a lifelong desire to cook for a living. In high school I was mostly interested in music, arts and drafting strangely enough. I was working as a kitchen-hand on the weekends and part of my duties was to help out on the larder section when they were busy. As it turns out I felt pretty comfortable in the rush of service, the intensity of a busy kitchen suited me, and I seemed to have a small amount of natural ability. I kept working in kitchens after I left school, but it was actually several years later that I really started to apply myself to cooking as a career.

HOW WOULD YOU DESCRIBE THE FOOD ETHOS OF STOKEHOUSE Q?
The ethos in the Stokehouse Q kitchen is to cook dishes of a contemporary style grounded in time-honoured preparations. Mediterranean inspired dining utlising the best produce we can get. I feel very fortunate to work with our passionate suppliers and producers.

DO YOU HAVE A FAVOURITE DISH ON THE STOKEHOUSE Q MENU?
I don’t have a favourite dish as such, but I am really excited about the Mooloolaba MSC swordfish we are using, and we buy these fantastic whole pigs direct from a farm out past Toowoomba. The menu is constantly changing and evolving around what produce is best at the time.

WHAT MAKES STOKEHOUSE Q UNIQUE IN THE BRISBANE FOOD SCENE?
The outlook from the dining room is second to none, right on the river looking across to the city. So obviously the location is a big part of our identity. Also, our relaxed atmosphere and casual approach to dining are just some of the many things Stokehouse is known for.

WHAT DO YOU LIKE MOST ABOUT SOUTH BANK?
The open spaces and the range of activities available. South Bank is a great place to relax, eat, swim, run, cycle and generally be outdoors. It’s refreshing to have this beautiful green space right in the heart of the city.
