Bananas caramalised in sugar, butter, rum and spices. What could be better? This recipe from Bourbon Street is so low-fuss it will become your new go-to dessert.
4 firm bananas, peeled and sliced in half length ways
80 g brown sugar
60 g unsalted butter
1/2 teaspoon vanilla paste
1/2 teaspoon ground cinnamon
pinch of sea salt
60 ml dark rum
Whipped cream, custard and/or ice-cream to serve
Put everything except bananas into a shallow pan or frying pan on low heat and bring to a gentle simmer.
Once the sauce just starts bubbling, add the sliced bananas and simmer for a minute on low heat.
Portion out two banana slices per bowl with sauce while still warm and top with whipped cream, custard or ice-cream (or all three!)
