Popolo’s Chocolate Delice

Chocolate Delice
500g egg yolks
250g caster sugar
1250ml full fat milk
1250ml-thickened cream
1750g Dark chocolate
750ml Thickened cream

For the chocolate delice, melt the chocolate in a Bain Marie. Cream the egg and sugar together in a large bowl. In a pan, boil the 1250ml cream and milk together and pour onto the egg mixture. Return to the heat and cook until thickened, or until the mixture coats the back of the spoon (80’c). Whip 750g of cream to soft peaks. Place chocolate into a blender and blitz, slowly adding the warm custard mix until all is incorporated and smooth.

Cocoa tuile
300g Butter
720g Caster sugar
60g Cocoa powder
120g Plain flour
360ml Orange juice

For the cocoa tuile, cream the butter and the sugar together in a large bowl. Add all the dry ingredients and then the orange juice. Allow to set in fridge. Spread onto a non stick-baking tray and cook in an oven set to 170 until dry and beginning to colour, remove and once crisp break into shards.

Salted Caramel
1kg Caster sugar
100ml water
600ml cream
600g butter

For the caramel, place the sugar and water in a pan over a medium high heat. Bring to a gentle boil without stirring and once the mixture turns a deep golden brown add the butter. Stir to combine- be careful the caramel will spit from the pan. Reduce the heat. Add the cream and mix well. Remove from the heat and chill.
